Balsamic Lamb Chops & Sweet Potato Mash

A perfect Spring meal...
4 Lamb Chops
2 Large Sweet Potatoes, peeled and chopped
1-2 tsp Dijon Mustard
1 tbsp Balsamic Vinegar
1 tsp Honey
Petit Pois, steamed to serve
Boil the potatoes until soft and mash with a knob of butter, Dijon mustard and seasoning.
Meanwhile mix the balsamic vinegar with the honey and brush over the lamb chops on both sides.
Grill on both sides 5 - 6 minutes giving them another gklaze half way through cooking.
Serve slightly pink with the mash and peas.
